Why Vegetarianism?
I’ve been asked many times over the years why I chose Vegetarianism. First off, I’ve always been an animal lover, so it made sense to not eat those I loved. Second, I’m very health conscience and giving up meat was the best thing I could have done for myself. Within 2 months, I had lost 15 pounds and most of my fibromyalgia symptoms went away. I started to feel better physically and emotionally.
Anyone who has seen slaughterhouse videos knows why one would chose not to eat meat. The conditions are not only unsanitary, but agonizing for the animals. After viewing “Meet Your Meat” many years ago, I began to question my reasons for eating meat. When I realize I had no reason to eat meat (besides taste), I gave it up.
I received some criticism from my family during the first few months and even recently have had some recent run-ins with them. They don’t understand why I chose to cut meat from my diet (and limit my dairy and egg intake), even though I’ve given them health facts about Vegetarianism and Veganism. They saw my dramatic transformation too after losing 15 pounds. My self-esteem went up tremendously and by the second month, I began dating and met my boyfriend (soon to be fiancé), Mark. He grew to accept my decision and is constantly looking out for me. He is an omnivore, but loves to eat any dish we prepare.
You don’t have to be a vegetarian to enjoy vegetarian meals (some people really disagree with this). If you eat meat, you probably eat many meals without meat in them without even noticing. I hope you and your family enjoy these delicious recipes!
